Quinoa Salad a healthy and refreshing vegetarian dish that combines cooked quinoa with fresh vegetables, this is a great light meal full of herbs, protein and fiber. The recipe of which is as follows.

Quinoa Salad Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese (optional)
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh herbs (e.g., parsley or basil), chopped

Directions:

1Rinse the quinoa with cold water.

2Take a pot and boil water in it and when the water boils, add quinoa, and reduce the boil. Then let the quinoa cook until the water is absorbed and the quinoa is soft.

3Allow the quinoa to cool first, then combine the quinoa, cucumber, bell pepper, cherry tomatoes, red onion and feta cheese in a large bowl.

4Drizzle with olive oil and lemon juice, then sprinkle with salt, pepper and herbs, mix well and serve.
